Macadamia Nut Cookies
1 c firmly packed brown sugar
1 egg well beaten
3 Tb flour
1 tsp vanilla
1 1/3 c macadamia nuts, chopped
1/4 to 1/2 stick butter
Melt butter over low heat. Add sugar and blend. Add egg, flour, and
vanilla and mix well. Stir in nuts. Drop 1 tsp batter on well-greased
cookie sheet, 3 inches apart. Bake at 350F for about 8 minutes. Let
cool 2 or 3 minutes and remove to a cooling rack. These will be very
thin and crispy. The nut will tend to collect in the center, so do not
over bake.
Yield: 4 dozen

Macadamia Cheesecake Cookies
1 c flour
1/3 c butter or margarine, softened
1/3 c brown sugar
1/2 c macadamia nut bits
1 egg
1 pkg (8 oz) cream cheese, softened
1/4 c sugar
2 Tb milk
2 Tb lemon juice
1/2 tsp vanilla
Preheat electric oven to 350F. In small bowl of electric mixer, combine
flour, butter, and brown sugar. Mix until fine particles are formed.
Stir in nuts. Reserve 1 c of mixture for topping. Press remainder into
ungreased 8-in square pan. Bake for 12-15 min or until lightly
browned. In small bowl of electric mixer, combine remaining
ingredients. Beat well; spread over crust. Sprinkle with reserved crumb
mixture. Bake for 25-30 min. Cool; cut into squares.
Makes 16 squares.
Macadamia Butter Bars
1 c butter or margarine
1 c sugar
1 egg
1 tsp vanilla
2 c flour
1 1/2 c macadamia nut bits
Preheat electric oven to 350F. Grease a 13x9x2-inch pan. In large bowl
of electric mixer, cream butter and sugar. Beat in egg and vanilla. Mix
in flour. Stir in 3/4 c of the nuts. Spread batter evenly in prepared
pan. Sprinkle with remaining 3/4 c nuts. Bake for 25-30 min. Cut into
bars while hot and remove from pan while warm.
Makes 32 bars.
